Instructions

Crust:

  1. Start with placing the chopped dates, salt, vanilla and coconut shreds in the food processor.
  2. Once you get everything to a smooth paste consistency add the pecans.
  3.  Use the pulse tab on the food processor to blend all of the ingredients with the pecans for the crust.
  4. After you blend the crust in the food processor, take it out and press it into a round spring form cake pan. Place the crust into the refrigerator to set while you are making the filling for the cake.

Filling:

  1. To make the cake filling you first want to put the palm sugar into the blender and blend on high till you get the palm sugar to a soft powder consistency.
  2. Then add the rest of the filling into the blender and blend on high.
  3. Once the filling is smooth and ready, you will want to pour half of it into the cake pan on top of the crust and let it set in the refrigerator while you are making the middle layer.

Middle Layer:

  1. To make the middle layer you will want to add all of the ingredients to the food processor and blend on high.
  2. Once the middle filling is ready and the first layer of the cake filling is set you are ready to spread the middle layer. After the middle layer is evenly spread, you can pour the other half of the cake filling on top.
  3. Place the whole cake into the refrigerator and let it set for 4 hours. Once the whole cake has had time to set, you will want to make the chocolate frosting.

Frosting:

  1. It’s pretty simple you will want to pour the almond milk in first and the rest of the frosting ingredients into the blender and blend on high until you have the smooth frosting.
  2. Take the cake out of the refrigerator and remove the frame of the spring form cake pan.
  3. Now with a spatula take the frosting and carefully spread the frosting all over the outer layer of the cake.
  4. Place it back into the refrigerator and let the frosting set for an hour.
  5. After you everything has set, you can take the cake out and sprinkle the edged with the coconut shreds; slice and serve.
