Our cinnamon is grown throughout Indonesia in a consistent tropical climate and mineral rich soils. When the cinnamon is ready to harvest, the outer layer of bark is scraped away and then thin layers of the inner bark are shaved off and dried in temperature controlled environments before being ground and sifted into a fine powder. Our cinnamon, also known as Korintje Indonesian cinnamon, is a relatively common variety but the flavor profile is extremely popular and has numerous applications in recipes, contains antioxidants, beneficial nutrients and has anti-inflammatory properties.
Cinnamon grows best in tropical environments with a wet climate and nutrient rich soil. The evergreen tree can grow up to 21 feet in height and has long smooth branches with glossy green oval leaves. The flowers of the tree bloom in early summer and are small, yellow in color and produce a small drupe. When the tree has grown for a few years, the bark is ready to be harvested. As the strips of cinnamon bark dries, it curls into rolls (also known as quills), a process that usually takes 4-6 hours to complete. After the cinnamon has dried it is ground into a fine powder, sifted and packaged to ensure maximum freshness, aroma and flavor.
