Coconut grow best in tropical environments with sandy, nutrient rich soils, plenty of rain and lots of sun. Before the trees start producing fruit, they grow coconut blossoms that are harvested for sap.
When the coconut blossoms have grown they are cut or "tapped" to release sap. The sap is collected in containers and needs to be cooked quickly to avoid fermentation that leads to spoiling. Sap is sweet, translucent and about 80% water.
After enough sap is collected it is heated to remove water and concentrate flavor. The sap is cooked over moderare heat in large pans. When the syrup is finished it is very thick, dark brown and sweet with notes of maple and molasses. Since the syrup is so thick, microorganisms can’t live in it so there’s no need for preservatives.
